Matt (22) hails from County Down, where he is completing his Culinary Arts BA. A serious young chef, he took time out to learn on the job, in the kitchen of Michelin Star restaurant Chapter One in Dublin, where he worked up to Chef de Partie.
During his time at Chapter One, Matt entered and won the Euro-Toques Young Chef of the Year in 2014, beating off more experienced competition with his simple and elegant dishes of ‘turbot’ and ‘apples.’ Special guest judge Phil Howard (The Square, London) remarked that Matt’s apple dessert was the best he’d seen in any competition he’d ever judged.
After the becoming Ireland’s top young chef, Matt teamed up with fellow young chef finalist and Chapter One chef Ian McHale to form their pop-up venture Heart & Sole. Matt has performed demos around Ireland as Euro-Toques Young Chef Ambassador, including on stage at Theatre of Food at Electric Picnic 2015.

- Believes in the theme ‘No Chef is an Island’ is about working as a team, sharing influences and bringing past experiences together in the kitchen
- Has been inspired by Hugh Fearnly Whittingstall since he was 14 and also shares Hugh’s passion towards eating less meat and using more vegetables
- His favourite part of being a chef is enjoying people’s reactions to the dishes he cooks
Matt is a great ambassador for the produce of Northern Ireland, which he showcases in all his demos.
