Irene Coughlan has been the chef at The Herons Cove for many years. She is from a farm in Goleen, where her mother and two brothers live. A sister, Claire, is a manager with the Maldron group and lives in Tuam. Irene is reNowned for her sensitive use of fresh ingredients, especially her light touch with fresh fish. With her experience from the advanced bakery courses she took in Birmingham she also makes beautiful bread and desserts. She is interested in travel, having been round the world a couple of times, music, reading and craic.
