Some of the issues Euro-toques Ireland has sought or seeks to promote:

- Localised sourcing of food and reduction of 'food miles'.
- Food Safety/Hygiene legislation which takes into account the special situation of small food producers and 'cook-to-order' restaurants
- Government support for small food producers
- Methods of sustainable cultivation and animal rearing that respect nature and the environment
- Reduction in the use of pesticides
- Recognition by Government of threat to Ireland of introducing GM crops and food products and recognition of consumer opinion on GMOs. Euro-toques seeks to keep the island of Ireland GM-free
- Tighter controls on animal feed generally and obligatory labelling on products (e.g. meat, dairy, fish etc) where GMOs have been used
- Efforts to provide affordable supplies of guaranteed GM-Free animal feeds
- Protection of food products under threat; e.g. raw milk cheese, native fruit and vegetable varieties, wild salmon, fresh blood pudding etc
- Honest and transparent food labelling
- Sustainable fishing and responsible stock management policies
- Education of future generations in relation to taste and diversity of food, sustainable agriculture, and healthy eating
- Education and development of student and professional chefs around quality of ingredients, responsible food sourcing, and respect for culinary traditions
