The Euro-Toques Commitment
On becoming a member of Euro-Toques every chef commits to observe and uphold the Code of Honour, which applies in all Euro-Toques countries.
In the sourcing of their food ingredients, Euro-toques members commit to:
- Respecting principles of seasonality
- Sourcing food as locally as possible.
- Knowing where their food ingredients come from and how they are produced.
- Using ingredients of high quality and superior taste, produced conscientiously, with respect for the environment and animal welfare.
- Supporting and promoting small & local food producers, including acknowledging their suppliers on their menu.
Euro-Toques Code of Honour
A chef’s chief duty is to respect his culinary traditions and the best principles of good cooking.
The chef must work with the same integrity and conscientiousness whatever the conditions or wishes or demands of his customers and his feelings towards them.
A chef should work under conditions that do not compromise the quality of his work, so that he can uphold the art of his profession.
The chef should promote the use of fine quality food and avoid products that have been adulterated or are undesirable for consumption. Similarly, any preparation that becomes unfit for consumption must be destroyed.
The chef must remain totally independent of his suppliers and not be compromised into accepting anything other than the best product available.
Misleading the customer’s good faith by serving products which are inaccurately described is forbidden. Such abuses are likely to give the profession a bad name.
Euro-Toques chefs should maintain good fellowship. They should provide moral assistance and professional support to each other. Anyone who has the professional grievance with a colleague should first attempt to settle matters with him. If a solution cannot be reached he can take the matter up with his national representative for arbitration.
It is every chef’s duty to keep his Euro-Toques colleague informed of the quality of products from his country or region, in the spirit of the Euro-Toques Charter.
